Black Bean Burgers
Ingredients:
2 (14 ounce) cans black beans, drained, rinsed, and patted dry
1 tbsp avocado oil
¾ cup finely chopped bell pepper
1 cup finely chopped yellow onion (1/2 of a large onion)
3 garlic cloves, minced (about 1 Tablespoon)
1 and 1/2 teaspoons ground cumin
1 teaspoon chili powder
½ teaspoon garlic powder
¼ teaspoon smoked paprika
½ cup flour
⅓ cup of mashed sweet potatoes
2 tbsp ketchup, mayo, or BBQ sauce
pinch salt + pepper
Directions:
Drain, rinse and pat your black beans dry. Add the beans to a baking pan to bake for 15 mins at 350F to dry out then let cool.
While the beans are cooling sauté the onions and peppers in oil until the onions are translucent and the peppers soften. (Add in the minced garlic about a min before the peppers and onions are done) Add salt and black pepper to taste.
Add peppers and onions to a bowl and pat away the extra moisture with a pepper towel. To that same bowl add your seasonings, flour, BBQ sauce, mashed sweet potatoes then give it a good mix. Then add in your black beans and mash up really well with a fork then mix thoroughly.
Form the mixture into patties the size of your choosing and fry in grape seed oil for about 2 mins on each side.
Serve on your favorite vegan buns with your favorite burger toppings.
