Chickpea "Egg" Scramble






Ingredients:

  • ½ cup Chickpea flour

  • ½ cup spring water

  • ¼ tsp ground tumeric

  • 1 tbs avocado oil

  • ¼ red onion, sliced

  • ¼ green bell pepper, roughly chopped

  • ¼ red bell pepper, roughly chopped

  • handful of spinach, roughly chopped

  • Himalayan pink salt

  • Black pepper


Directions:

Thinly slice red onion, red bell pepper & green bell pepper. Roughly chop spinach.


To a bowl add chickpea flour, spring water, tumeric, salt, black pepper and mix thoroughly.


Add avocado oil to a non stick pan on medium heat. Pour in chickpea egg mixture. Add in onions, peppers, spinach. Use a spatula or spoon to Scramble exactly how you would Scramble eggs. This process takes 5-7 mins to get the texture I'm looking for. Season to taste a bit more with salt & pepper if needed.


Drizzle with maple syrup and enjoy!
