Vegan Blueberry Pancakes



Ingredients:

  • 1 cup unbleached Bread Flour

  • 1 tbs coconut sugar

  • 1 ½ tsp baking powder

  • ¼ tsp salt

  • 1 cup almond milk

  • 1 tsp vanilla extract

  • 1 tbs coconut oil plus more for cooking pancakes.

  • 1 flax egg (1 tbs flax meal plus 3 tbs spring water)

  • 1 - 2 handfuls of Blueberries


Directions:


To a small mixing bowl add flour, coconut sugar, baking powder, salt and mix thoroughly.


To a separate mixing bowl add almond milk, flax egg, coconut oil and mix thoroughly. Stir in Blueberries and let batter rest for 5 minutes.


Pour dry mix into wet mix and mix until just combined. Please make sure not to overmix.


Add 2 tsp of coconut oil to a nonstick pan on medium heat. Add 1/3 cup of pancake batter to the pan. Cook for 2 mins one side and for 1 min on the other side.


Top with extra Blueberries, Drizzle with maple syrup and enjoy!
